I was a hard sell when it came to the world of vegan baking. All the baked goods I'd tried from different vegan bakeries (with the exception of Babycakes) were either disgustingly gummy in texture, or super-dry and healthy-tasting in a gnarly-hippie way. But when my bff went vegan, I was introduced to this cookbook. I've made a lot of these cupcake recipes and I have yet to run into a dud! Vegans and non-vegans alike scarf these down, and the non-vegans can't even tell that the cupcakes were made without eggs and butter. Another bonus is that most of the recipes don't feature ingredients that are hard to find (which can be a real hurdle in vegan baking).
